Weekend Breakfast Hash

I had big plans for Memorial Day weekend! After finishing up some touch up painting, laundry, and a few other small household things, I had a great list.
First, I thought we could take a road trip somewhere.
Second, I wanted to build planters for my back patio and plant some herbs.
Third, purchase a new grill (Big Green Egg).
Fourth, go to the Farmer's Market and cook something on our new grill.
After a long weekend of feeling like all we did was work on the house, Basically only the third item happened. We did find and purchase a brand new Big Green Egg (still in boxes) from someone on Craigslist for a large discount. We were really happy that it was brand new until we sat down to assemble all the pieces -- 2 hours later we had a functioning grill.
We did walk over to the Pico Farmer's Market (which is now only 2 blocks away from our new home!!!) and I was able to cook a few things this weekend but the big grilling event will have to wait for another weekend. Small home projects that seem like no big deal when you're thinking about them always end up consuming entire days. However, I will say that after renting for a long period of time -- Jason and I unanimously agree that we would rather spend time to make our house amazing rather than rent somewhere and be unable to fix simple things or spend time and money to make the place you come to every day feel like home.
So, this week I'm going to share the meal we had Sunday morning which is a go-to that I've perfected over the years. So much so, in fact, that my husband Jason actually cooked this! This is, hands down, my favorite breakfast meal and is versatile enough to be dinner as well.
Weekend Breakfast Hash
3 small red potatoes, scrubbed and cubed
salt and pepper
2-3 turkey or chicken sausages, sliced (I love Costco's artichoke/spinach version)
3 stalks green onions, chopped
1/4 c. sharp cheddar cheese, shredded
2-3 eggs, fried
1 avocado, sliced
Put potatoes in fry pan on Med heat and cover with lid. Cook for 8-12 min. occasionally stirring and add salt and pepper. Once potatoes are just starting to cook (they change from glassy and hard, to softer looking), remove the lid and add the meat. Fry for an additional 3-5 min. until browned. Add green onions in last 1-2 min. Remove from heat, put on serving platter, and add cheddar cheese. Fry eggs in same pan and ensure you season well with salt and pepper. Serve large scoop of potatoes, top with fried egg, add avocado slices on top. Enjoy with a cup of coffee! Huge thanks to Kate Voda for the below picture... www.katevodaphotography.com
