Most Important Meal of the Day

When I was growing up, my Mom would get up every morning and make me a big breakfast..think Pancakes, French Toast, hash browns, omelet, muffins, homemade bread with jam -- yes, I was spoiled and loved. But these days, I stay in bed until the very last minute, so when I leave the house I grab a banana, yogurt, or granola bar and call it a day. By about 11 AM, my stomach is growling and I'm in a meeting impatiently watching the clock until recently when I discovered my newest go-to. I've tried out a lot of options but this recipe is hands down my favorite and it meets all my criteria: fast, easy, healthy, and filling!
