Kimchi

I've always been a firm believer in making time for what's important in life. BUT, sometimes life is busy -- it really is and even the important things you don't always have time for. Lately, I have this great new solution -- I combine things I like and do them all at once so I get to do twice as much stuff in the same amount of time every week!

Need to talk to me at work 1:1?
Coming in to interview for a position?
Ready for lunch?
Want to go shopping?
Hungry for an ice cream cone at the shop down the street -- or a few streets?
Need groceries?
...grab your tennis shoes because we're walking! 

CrossFit, Trail Running, Volleyball, Yoga -- these are on my calendar every week and it also means hanging out with my fav people at the same time!

My new rules:
1. Combine walking with anything else whenever possible to get more steps on FitBit
2. Combine hanging out with friends and exercise

I think the trick was to find other people who are interested in being active no matter what you're doing. Once I found those people, I was golden. I started with a few key friends at work who are willing to take a break and WALK! And then, to be fair, once I joined CrossFit, active people in my life exploded...and once I became friends with Monica, I never had to invite anyone because she brings a posse for whatever activity is next! In fact, I'm now doing so much exercise that I'm starting to experience issues and sometimes I just have to say, I think I need to take a break tonight. I need to just sit down for an hour or two! Anyhow, I'm feeling very grateful for the key people in my life who keep me active and at the top of my FitBit leader board :)

I'm also loving Blue Apron because it's helping me eat healthy meals at home more often! Every recipe is fresh, real food -- nothing processed! This week I'm going to share another recipe I made which I thought was absolutely delicious -- just a few ingredients, simple, and not something I had ever made before...but super healthy and sooo yummy! You'd think I was a salesperson for Blue Apron but (unfortunately for me and my pocketbook) I'm not -- I just love it that much! I also figure, for those of you who don't get Blue Apron, I can share my favorite recipes with you so you can enjoy them while also cataloging them for myself for future use!

Cucumber-Radish Kimchi

6 oz. radishes
1 English cucumber
2 Tbsp. Rice Wine Vinegar
1 Tbsp. Sugar
2 cloves garlic
1 1/2-inch piece Ginger
2 scallions
olive oil, salt and pepper
2 tsp. Gochugaru (Korean Chile Flakes)  I've added a link to Amazon incase you don't happen to have this in your pantry! 

Wash and dry produce. Trim and discard the ends of the radishes; thinly slice into rounds. Thinly slice the cucumber into rounds. Peel and mince the garlic and ginger. Cut off and discard the root ends of the scallions; thinly slice the green tops on an angle.

In a large bowl, combine the radishes, cucumber, vinegar, garlic, ginger, sugar, scallions, drizzle of olive oil, and Gochugaru. Toss to thoroughly combine and season with salt and pepper to taste. Set aside and let marinate, stirring occasionally, for at least 10 minutes.

Enjoy separately or add to any sandwich or rice bowl for a great burst of flavor!!!
