Apple Butter

  1. I've accepted the fact that I like to think I can do way more than physically and mentally possible and this makes me grumpy and stressed sometimes
  2. I've accepted the fact that I will always think I should be making more money and be able to find someone who does less and is
  3. I've accepted the fact that my husband will probably never be as excited as I'd like him to be about the idea of having children
  4. I've accepted the fact that my brother may never get around to building the features on this site we talked about last December which was the reason I started writing this blog
  5. I've accepted that my mother thinks it inconceivable to eat German pancakes without Apple Butter
  6. I've accepted that my life is pretty amazing if these are the worst things that I have to accept

So, to address item #1 -- I've started really trying to only do what I can each day. Case in point, today I had to prepare a deck for a presentation tomorrow and talk to a few people before I could leave work. Rather than trying to fit it in so that I could make it to work out, I just didn't make it to work out. And now, I'm choosing to write this blog because I WANT TO rather than cooking dinner. (sorry Jason! -- it's your turn to make dinner and you're going to have to)

My favorite thing to do is to skip something I want to do because I didn't have time and then come home and do other miscellaneous chores rather than focusing on the things I want to get done. It's all a balance though. If you start skipping going to the gym, all of a sudden, you lose your routine and always have an excuse to not make it. Just like it's easy to never leave work on time. As with everything else in life, I've realized I have to find that balance and be very diligent about assessing true importance and criticality of what I need to get done and by when. I've also discovered the art of outsourcing and it is AMAZING!

To address item #6 -- most of you have never heard of Apple Butter. When you read the recipe, you'll probably wonder why it's called Apple Butter when there is no butter to be found. I can't answer that question. But, I can tell you that this is a simple recipe and really is delicious on top of German Pancakes. And since I made these earlier this week AND happen to have some leftovers AND since my Mom feels that her recipe for German Pancakes hasn't been authentically represented without the option of putting Apple Butter on top of the German Pancakes...I made Apple Butter tonight which I am sharing with you so you can choose to make it and top your pancake with it, if so desired.

Apple Butter (to top German Pancakes)
1 qt. apple sauce
2 Tbl. vinegar
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. allspice

Mix together in sauce pan. Bring to boil over med-high heat. Reduce heat to med-low and simmer for 15 min., stirring occasionally. Put on top of German Pancakes and enjoy! Feel free to reduce this recipe if you're like me and will not eat an entire quart of Apple Butter--ever. I did 1 cup of Applesauce worth which is 1/4 of this recipe and it turned out perfect...
